These quick pickles come together within 15 minutes, so there's no need to buy canned versions ever again. Sweet, salty and lots of crunch - we love them with Breakfast Tacos, any sort of wrap or just on its own as a snack!
Time: 15 minutes
1 Persian cucumber, sliced thinly
1 tsp kosher salt
1 Tbsp mirin
1/4 tsp toasted sesame oil
1 dash black sesame seeds (optional)
Toss cucumber slices with kosher salt. Land let sit 5 minutes.
Rinse cucumbers and dry on paper towels. Toss with mirin and let sit 10 minutes.
