Crunchy Cucumber "Pickles"

These quick pickles come together within 15 minutes, so there's no need to buy canned versions ever again. Sweet, salty and lots of crunch - we love them with Breakfast Tacos, any sort of wrap or just on its own as a snack!

  • 1 Persian cucumber, sliced thinly

  • 1 tsp kosher salt

  • 1 Tbsp mirin

  • 1/4 tsp toasted sesame oil

  • 1 dash black sesame seeds (optional)


  1. Toss cucumber slices with kosher salt. Land let sit 5 minutes.

  2. Rinse cucumbers and dry on paper towels. Toss with mirin and let sit 10 minutes.
