Eggplant Pizzas

Pizza craving? No problem! These little eggplant pizzas are easy to whip up and totally guiltless!

Time: 20 minutes

Servings: 2

INGREDIENTS

  • 1 large eggplant, sliced into 1/2” thick pieces
  • 1 Tbsp extra virgin olive oil
  • 1 tsp kosher salt

Per Pizza

  • 2 Tbsp preferred tomato sauce
  • 1 1/4” slice fresh mozzarella
  • 2 grape tomatoes, halved
  • 2 leaves sweet basil

DIRECTIONS

  1. Preheat oven to 425F.

  2. Toss eggplant slices with olive oil and salt.

  3. Place in 1 layer on parchment-lined sheet tray.

  4. Roast 8-10 minutes until well browned.

  5. Place tomato sauce and mozzarella on each eggplant slice and return to oven for 5-6 minutes until cheese has melted.

  6. Top with tomatoes and basil.
