Pizza craving? No problem! These little eggplant pizzas are easy to whip up and totally guiltless!
Time: 20 minutes
- 1 large eggplant, sliced into 1/2” thick pieces
- 1 Tbsp extra virgin olive oil
- 1 tsp kosher salt
- 2 Tbsp preferred tomato sauce
- 1 1/4” slice fresh mozzarella
- 2 grape tomatoes, halved
- 2 leaves sweet basil
Preheat oven to 425F.
Toss eggplant slices with olive oil and salt.
Place in 1 layer on parchment-lined sheet tray.
Roast 8-10 minutes until well browned.
Place tomato sauce and mozzarella on each eggplant slice and return to oven for 5-6 minutes until cheese has melted.
Top with tomatoes and basil.
