Miso Glazed Salmon

Sweet white miso is a versatile ingredient that pairs beautifully with fish. Keep a small container of this sauce around - we promise you'll be reaching for this to dress everything from stir-fries to tuna.

Miso Glazed Salmon

Time: 30 minutes

Servings: 2


  • ½ lb skinless salmon
  • Kosher Salt
  • Black Pepper

Miso Glaze

  • ¼ cup soy sauce
  • 1 cup water
  • 1 Tbsp sweet white miso
  • 2 scallion, chopped
  • 3 1/8” slices ginger, sliced
  • 4 cloves garlic, sliced

Wilted Spinach

  • 2 tsp grapeseed oil
  • 4 oz spinach
  • 1 cup maitake mushrooms
  • ¼ lemon, juiced
  • 1 dash kosher salt


  1. Heat oven to 400F.
  2. Toss salmon with salt and pepper and place on parchment lined sheet tray.
  3. Bake for 10-15 minutes or until desired doneness.
  4. Spoon 1 Tbsp glaze over salmon. Serve with wilted spinach and mushrooms.


Combine miso glaze ingredients in medium sauté pan and bring to a boil on high heat. Lower heat to medium and whisk as glaze is simmering. Reduce by ½ (approximately 10 minutes) and remove from heat. Strain.


In medium sauté pan, heat grapeseed oil on high until slick and shiny. Add mushrooms with dash of salt. Sauté 1 minute until mushrooms are crispy on 1 side. Flip mushrooms and add spinach. Sauté 2-3 minutes until spinach is wilted and mushrooms are cooked through.
