Tofu and Vegetable Stir Fry

Meet your new comfort meal. This stir fry is easy to whip up and adaptable to whatever vegetables you have in your fridge! Bamboo shoots are an nutritious addition and can be found in most Asian aisles of grocery stores.

Tofu and Vegetable Stir Fry

Servings: 4

Timing: 30 minutes

INGREDIENTS

  • 2 tsp grapeseed oil
  • 1 tsp sesame oil
  • 1 block extra-firm tofu, drained, diced
  • 1 Tbsp hoisin sauce
  • 1 Tbsp soy sauce
  • 1 sprinkle black sesame seeds
  • 1 tsp sesame oil
  • 1 Tbsp grapeseed oil
  • 1 yellow onion, sliced
  • 2 cups broccoli, florets only
  • 1 red bell pepper, julienned
  • 1 Tbsp soy sauce
  • 1 8oz can sliced bamboo shoots, drained, rinsed
  • 1 cup snow peas, trimmed
  • 3 Tbsp hoisin sauce
  • 1 Tbsp soy sauce
  • 1 tsp ginger, minced
  • 1 Tbsp scallion, sliced (optional)

INGREDIENTS

  1. In large sauté pan, heat grapeseed & sesame oil on high until slick and shiny.
  2. Add tofu and sauté 5-7 minutes until golden brown on all sides.
  3. Add hoisin and ginger and sauté another 2-3 minutes.
  4. Toss with black sesame seeds and remove from heat. Reserve.
  5. In large sauté pan, heat grapeseed & sesame oil on high until slick and shiny.
  6. Add onion, broccoli and red bell pepper with soy sauce and sauté 4-5 minutes until onions are translucent.
  7. Add bamboo shoots and snow peas with hoisin sauce and ginger. Sauté another 5-8 minutes.
  8. Add tofu and stir to combine. Top with scallion.
